Regenerating Vitamin A smoothie
Mette SkjærbækThis smoothie provides plenty of vitamin A, which is essential for keeping your skin healthy and even-toned. Vitamin A has a positive effect on blemished skin, sun-damaged skin, pigmentation, and fine lines and wrinkles.
Vitamin A is a fat-soluble vitamin, so it’s important to consume it alongside fats so that your body can absorb it. So please don’t skip the oil in the recipe!
This recipe makes approx. ½ litre of smoothie
Fruit and vegetables can be used either frozen or fresh.
- 1 carrot – preferably lightly steamed*
- ½ tomato – preferably lightly steamed*
- 1/3 of a courgette
- 1 banana
- 1 dl mango
- The juice of 1 orange
- 1 cm ginger, cut into small pieces
- 2 tsp pumpkin seeds
- 3 dl water, coconut water or cold herbal tea**
- 1 tsp linseed oil
- 2 tsp olive oil
+ Optional: anti-inflammatory chilli or cayenne pepper, if you like a bit of a kick in your smoothie.
Add lemon juice if you’d like a more tangy smoothie.
Method
Add all the ingredients to the blender, except the oil, and blend until you have a smoothie with no lumps.
Finally, add the linseed and olive oil, blend for a further 10 seconds, and the smoothie is ready to drink.
Other good sources of vitamin A:
Apricots, plums, broccoli, peaches, courgettes, kale, cabbage, melon, pears, spinach, sprouts, sweet potato, cranberries, peas.
*Feel free to steam the carrots and tomatoes before using them. You could bake them lightly in the oven whilst it’s on, or bring a little water to the boil in a saucepan, place a sieve with the vegetables over the saucepan, and let them steam for about 10 minutes. Let the vegetables cool before using. You could prepare larger portions at a time and freeze them so you have enough for several days.
**Make a pot of tea in the evening before you go to bed and leave it to cool overnight. Then it’ll be ready to add to your smoothie in the morning. Find more tips and tricks for your smoothie here.
