Lemonaderus smoothie og ispinde

As a smoothie, as homemade ice lollies for the kids, perhaps an ice-cold slushie with vodka, as an ice cream dessert with toppings, and I’m also tempted to make it into a warm lemon sauce for fish, because it tastes so deliciously citrusy!
This thirst-quenching Lemonade Rush is packed with lots of healthy bioactive plant compounds; it’s rich in, amongst other things, vitamins B and C, minerals and plant-based protein from cauliflower and cashew nuts.

This recipe makes approx. ½ litre of smoothie.
Fruit and vegetables can be used either frozen or fresh.
- 30 grams of cauliflower
- 5 cm of squash/courgette
- Grated zest of 1 lemon
- Juice and pulp of 2 lemons
- ½ banana
- 10 green grapes
- 10 cashew nuts
- 1 tsp honey
- 1 dl water
Method
Add all the ingredients to the blender and blend until you have a smooth, lump-free smoothie.
The grated lemon zest can be added afterwards if you’d like small pieces in the ice lolly.
Enjoy chilled as a smoothie or freeze into ice lollies. You can also serve it as a tangy ice cream dessert in small bowls. Garnish with pistachios, whipped cream, chopped dark chocolate or similar, if desired.
Remember to drink a glass of water after your smoothie or ice lolly – to rinse the acid from the lemon off your teeth.
PLEASE NOTE! If you’re drinking Lemonaderus as a regular smoothie, it needs to be allowed to cool down after blending to be truly refreshing and thirst-quenching. You could use frozen cauliflower, courgette, banana or similar so it’s cold straight away, or use ice cubes instead of water. I love having plenty of ingredients in the freezer so there’s always something ‘ready to go’ – especially vegetables – and I also think that something happens to the fibre and flavour in vegetables when they’re frozen; for example, broccoli tastes less pronounced when it’s frozen.
