SUN SMOOTHIE - or popsicles
Refreshing smoothie recipe
It provides optimal hydration and nourishment for the body before, during and after time in the sun.
We’ve created the perfect sweet combination of cantaloupe melon – with its low sugar content – mango and sweet potato, which, although very sweet, are very low on the glycaemic index*.
SUN SMOOTHIE is rich in:
Carotenoids, which naturally give the skin a healthy glow (cantaloupe melon, sweet potato).
The powerful antioxidant vitamin C, which helps protect against UV radiation (cantaloupe melon, sweet potato, orange, mango).
The mineral potassium, an electrolyte that helps maintain a healthy fluid balance (cantaloupe melon, orange)
Vitamin A, which strengthens the skin and provides UV protection (sweet potato, mango)
*(The glycaemic index (abbreviated to GI) is a measure of how much blood sugar levels rise after eating a food, relative to a reference value. Source: Ministry of the Environment and Food)

This recipe makes approx. ½ litre of smoothie
Fruit and vegetables can be used either frozen or fresh.
- ¼ cantaloupe
- 1.5 dl mango (½ mango)
- 1.5 dl sweet potato**
- Juice of 1 orange
- 1 – 1.5 dl water or coconut water
- 2 tsp olive oil, coconut oil or similar
**Sweet potatoes must not be eaten raw; always steam or bake them before use.
Method
Steam the sweet potatoes before use. You can bake them lightly in the oven, or bring a little water to the boil in a saucepan, place a steamer basket with the vegetables over the saucepan, and let them steam for approx. 10 minutes.
Leave to cool before use. You may wish to prepare larger portions at a time and freeze them so you have enough for several days.
Add all the ingredients to the blender and blend until you have a smoothie with no lumps.
Finally, add the oil, blend for a further 10 seconds, and the smoothie is ready to drink.
Enjoy chilled as a smoothie or freeze into ice lollies. If you use all the ingredients straight from the freezer, it makes a refreshing cold slush or dessert.
